Brewing Shochu

Shochu is one of spirits and made from Koji-Rice based on rice, sweet potatoes or barley. Kome-Shochu is made from rice and Koji-Rice. Imo-Shochu is made from sweet potatoes and Koji-Rice. Mugi-Shochu is made from barley and Koji-rice. Generally, alcohol of Shochu is 25, maximum 40.
